The Origins of the Hibachi

When one thinks of the characteristics of Japanese cuisine, common cooking methods such as sushi, tempura batter and frying, and sashimi come to mind. The modern grilling technique known as hibachi, popularized by many American Japanese restaurants and grills, is actually one of the most famous cooking techniques in Japanese cuisine. The origins of the hibachi as a heating device date back centuries in Japanese history; however, the hibachi has spent centuries evolving in both form and execution. Although hibachi is one of the most sophisticated and refined cooking techniques in Japanese fine dining venues and restaurants, its origins are actually quite humble and contrast with the modern use of hibachi.

Since metal was not widely available in Japan, the earliest hibachis were made from an amalgam of cypress wood, which was then lined with clay. These devices functioned primarily due to their heat-retention capabilities and were not originally intended for cooking. Over time, these devices took on a more artisanal appearance and, in addition to gold-leafing techniques, featured refined exterior finishes, including decorative painting and patterns.

Contemporary hibachi

Historically, the first restaurant in Japan to use hibachi cooking opened in 1945. The goal of these restaurants was not simply to serve food, but to entertain their guests with food preparation and an impressive variety of dishes. Their strategy for entertaining guests included demonstrating the professional use of knives, juggling ingredients and spices, and even performing tricks with the flames emitted by the hot grill. Finally, in the second half of the twentieth century, hibachi-style cooking was introduced in the United States with great success and acclaim. Therefore, it may be true that hibachi cooking was once used as a food preparation tool in Japanese households. However, hibachi cooking was not fully appreciated until Japanese tourism became popular, both for its entertainment value and its contribution to Japanese gastronomy.
